I mean who doesn’t love a snack? With these king prawns, you can make a PF Chang’s own Dynamite shrimps at home which is just perfect during this pandemic and cold weather. It can be made as a starter too if your eating a full 3 course meal maybe for Valentine’s Day which is just round the corner.
This recipe takes me back to when I fell in love with the dish when my husband took me to Dubai and we went to PF Chang’s for dinner. Honestly, the dynamite shrimps were to die for. I just had to figure out how they were made.
I tried so hard to find the same recipe and i think I’ve finally perfected it. Here is my take on how to make the best Dynamite Shrimps inspired by Pf Chang’s.
How to make my version of the best Dynamite Shrimps
The King prawns I use are the IBCO Tiger brand size 8/12 as they are really big and juicy. They come with the shell on which is easily removed. These are by far the best prawns I have used for this recipe. Now without further ado, please find the recipe below.
Ingredients For 2
- 1 Pack Tiger Brand 8/12 King prawns
- 1/2 cup of Mayonnaise
- 1/2 cup of sweet chilli sauce
- 2 Tbsp of sirracha sauce
- 1 Tsp of Soy sauce
- 1 egg
- 1/2 cup of corn starch
- 1/2 cup of all purpose flour
- 1 tsp of salt
- Spring onions to garnish
The king prawns will come frozen so you will have to soak them in a bowl of hot water. Once they have defrosted, you will need to peel the shell. The tail should come off when pulled.
Preparing King Prawns IBCO Tiger Shrimps size 8/12
Wash the prawns after they have been peeled with salt and warm water as prawns have a distinctive fish like smell, this will get rid of that smell.
Preparing Special Sauce Mix
In a bowl, you add mayonnaise, sweet chilli sauce and sirracha sauce. Give this a good mix and keep aside for later.
In a separate bowl add the prawns, with soy sauce and the egg. Mix this and keep aside.I then add the flour, cornstarch and salt into another bowl and mix this. Dip each prawn into the flour mix and place on a plate. Keep doing this until all the prawns are covered.
Deep fry the prawns 2 minutes on each side until golden.
Once they have all been fried add them all into the mayonnaise mixture ensuring a good coating.
To present, I place the prawns in a decorative bowl and garnish with spring onions ready to serve immediately.
